Ingredients:
- 15 grams (1 tablespoon) oatmeal flour
- 30 grams (2 tablespoons) 9% fat cottage cheese (Tvorog)
- 15 grams (1 tablespoon) wholemeal flour
- 2 large eggs
- 15 grams (1 tablespoon) raw oat bran
- 5 grams (1 teaspoon) olive oil
- 1/2 tsp of backing powder
- 15 grams (1 tablespoon) Greek yogurt
Instructions:
Prepare the Batter:
- In a mixing bowl, combine wholemeal flour, oatmeal flour, raw oat bran, backing powder and cottage cheese (Tvorog).
- Crack in the eggs and mix the mixture until well combined and smooth. Allow the batter to rest for about 5-10 minutes. This allows the flours to hydrate and the flavors to meld.
Cooking the Pikelets:
- Heat a non-stick skillet or frying pan over medium heat. Add a small amount of olive oil and spread it around the pan.
- Pour small portions of the batter onto the skillet to form individual pikelets. You can make them as small or large as you prefer.
- Cook until bubbles start to form on the surface of the pikelets and the edges appear set, about 2-3 minutes.
Flip and Cook:
- Carefully flip each pikelet using a spatula and cook for another 1-2 minutes on the other side, or until golden brown and cooked through.
- Once cooked, transfer the pikelets to a plate and continue cooking the remaining batter in batches.
- Sides:
- For Sweet Side: Take 2 handful of berries or slice a banana, or nectarine or peaches or any other fruit of your choice and add 2 tablespoons of Greek Yogurt
- For a Savory Side: Grill one rind of Middle Bacon, whip 3 table spoons of fresh till thickened adding 1 tablespoon of Greek yogurt, then sweeten it with stevia blend.
Serve:
- Serve the warm pikelets with your choice of toppings such as fresh fruit, or slice of grilled bacon, whipped cream or yogurt and agave syrup.
