Ingredients:
Pasta Dough:
- 500 grams all-purpose flour
- 50 grams wheat bran
- Pinch of Himalayan salt
- 3 large eggs
- 15 grams egg yolk
- 1 tablespoon olive oil
- 2 tablespoons water
Pasta Filling:
- 1 large onion, finely chopped
- 2 tablespoons olive oil
- 0.20 cups chopped chili (adjust to taste)
- 2 teaspoons pink Himalayan salt (adjust to taste)
- 0.25 cup fresh basil leaves, chopped
- 40 grams whole milk ricotta cheese
- 5 grams NZEALTH Ten Spice Sprinkle
- 500 grams minced beef
- 5 grams NZEALTH 4 SPICE PASTE
For Serving:
- 20 grams butter
- 50 grams Parmesan cheese, grated
Instructions:
Prepare the Pasta Dough:
- In a large mixing bowl, combine the all-purpose flour, wheat bran, and a pinch of Himalayan salt.
- Create a well in the center of the flour mixture and add the eggs, egg yolk, olive oil, and water.
- Using a fork or your hands, gradually incorporate the flour into the wet ingredients until a dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Put the dough under the glass bowl for at least 30 minutes.
Prepare the Pasta Filling:
- In a mixing bowl, combine the chopped onion, chopped chili, pink Himalayan salt, fresh chopped basil leaves, ricotta cheese, NZEALTH Ten Spice Sprinkle, and NZEALTH 4 SPICE PASTE. Mix well until thoroughly combined.
Assemble the Ravioli:
- Divide the rested pasta dough into 4 smaller portions please refer to the pictures. take one portion at the time and form a long sausage. Cut sausage into 1 cm slices. Roll out each slice into thin circle using a rolling pin.
- Place teaspoonfuls of the beef and ricotta filling onto one circle of pasta dough, leaving space between each mound of filling.
- Gently seal the ravioli.
- Place the ravioli upon floured board or any other surface.
- Repeat this process with every ravioli until all done.
Cook the Ravioli:
- Bring a large pot of salted water with some olive oil to a boil. Carefully add the ravioli to the boiling water and cook for about 3-4 minutes, or until they float to the surface and are cooked through.
- Remove the cooked ravioli from the water using a slotted spoon into the serving flat dish with some cut up butter, mix genteelly until well coated with the flat spatula.
Serve:
- You can serve it with any side salad or rocket and parmesan
- Serve the ravioli hot, and garnish it with grated Parmesan cheese.
