
This recipe Serves: 6 people
Ingredients:
- 6 potatoes, quartered
- 2 kumara, quartered
- 250g cherry tomatoes, cut
- 2 capsicums, chopped
- 3 carrots, grated
- 2 large onions, chopped
- 12 garlic cloves, minced
- 1 chilli, finely chopped
- Parsley, chopped (for garnish)
- 7 brown mushrooms, chopped
- 4 tbsp grated parmesan
- 1 egg
- 2 tbsp wholemeal flour
- 1 tbsp NZEALTH 4 spice paste
- 1 tsp NZEALTH 14 spice sprinkle
- 1 tbsp Himalayan salt
- Olive oil (for greasing tins)
Instructions:
1️⃣ Prepare the Potatoes & Kumara:
- Boil the potatoes and kumara in water with 1 tbsp of Himalayan salt and 1 tsp NZEALTH 14 spice sprinkle.
- Simmer until soft, then drain.
2️⃣ Prepare the Ingredients:
- Chop mushrooms, onions, capsicums, garlic, chilli, and parsley.
- Grate the carrots and parmesan.
- Cut the cherry tomatoes in halves or quarters.
3️⃣ Make the Potato Mixture:
- Mash the drained potatoes and kumara.
- Add the grated parmesan, egg, and 2 tbsp of wholemeal flour.
- Mix thoroughly until well combined.
4️⃣ Prepare the Filling:
- Stir-fry onions in olive oil until soft.
- Add grated carrots, mushrooms, garlic, and chilli.
- Season with 1 tbsp NZEALTH 14 spice sprinkle and 1 tbsp NZEALTH 4 spice paste.
- Stir in the chopped tomatoes, then gradually incorporate the mince, cooking until fully done.
- Garnish with chopped parsley.
5️⃣ Assemble the Pies:
- Grease baking tins with olive oil.
- Form handful-sized potato balls and press them evenly into each tin, covering the base and sides.
6️⃣ Fill the Pies:
- Add the mince filling to each tin.
7️⃣ Create the Top Layer:
- Form more handful-sized potato balls.
- Flatten each ball into a round patty using baking paper.
- Place the potato patties on top of the filled tins.
8️⃣ Seal the Pies:
- Use a spatula to gently press the edges inward, sealing the pies.
9️⃣ Bake:
- Bake until golden brown.
