🛒 Ingredients:
Sweet Shortcrust Pastry:
160g High-Grade White Flour
30g Wholemeal Wheat Flour
½ tsp Baking Powder
50g Natvia Sweetener
105g Unsalted Butter (cut into small pieces)
1 pinch Himalayan Salt
¼ cup Ice-Cold Water
Cheesecake Filling:
500g Philadelphia Cream Cheese (two packs of 250g each)
250g Sour Cream
3 Large Eggs
2 tsp Vanilla Essence
80g Natvia Sweetener
Berry Topping:
200g Fresh Blueberries
2 cups Fresh Strawberries (quartered)
100g Sugar-Free Strawberry Jam

Sweet Shortcrust Pastry:
1️⃣ Prepare the Butter: Cut the butter into small cubes and let it sit at room temperature for 30 minutes to soften slightly.
2️⃣ Mix Dry Ingredients: In a large mixing bowl, combine the white flour, wholemeal flour, and baking powder.
3️⃣ Rub in the Butter: Add the butter to the flour mixture and rub it in using your fingertips until it resembles coarse breadcrumbs.
4️⃣ Form the Dough: Add the ice-cold water, Natvia sweetener, and salt to the mixture, then knead gently until it comes together.
5️⃣ Knead & Chill: Lightly dust a clean surface with wholemeal flour and knead the dough until smooth. Wrap in plastic wrap and refrigerate for at least 60 minutes or overnight.
6️⃣ Prepare for Baking: If chilled overnight, remove the dough 1 hour before baking. Roll it into a circle and press into a flat pie tin evenly.
7️⃣ Pre-Bake the Pastry: Preheat oven to 180°C (160°C fan bake). Place the pastry in the oven and bake. As it shrinks, remove it, reshape it in the tin, and return it to the oven. Repeat 2-3 times if necessary.
8️⃣ Final Bake & Cool: Bake until lightly golden, then let it cool for 30-40 minutes before adding the cheesecake filling.
Cheesecake Filling:
1️⃣ Preheat the Oven: Keep the oven at 160°C (140°C fan-forced).
2️⃣ Mix Ingredients: In a large bowl, beat together the cream cheese, sour cream, and Natvia sweetener until smooth.
3️⃣ Add Eggs & Vanilla: Add the eggs one at a time, mixing well after each, then add the vanilla essence and combine.
4️⃣ Bake the Cheesecake: Pour the cheesecake mixture over the cooled shortcrust pastry base and bake for 45 minutes.
5️⃣ Cool Gradually: Turn off the oven and leave the cheesecake inside to cool slowly before removing it.
Berry Topping:
1️⃣ Prepare the Strawberries: Wash and quarter the strawberries.
2️⃣ Warm the Jam: Microwave the sugar-free strawberry jam for 15-20 seconds until slightly runny.
3️⃣ Decorate the Cheesecake: Arrange the blueberries and quartered strawberries evenly on top.
4️⃣ Drizzle the Jam: Use a spoon to distribute the warmed jam evenly over the berries.
5️⃣ Chill Before Serving: Refrigerate for at least 2 hours before slicing.
