Ingredients

  • 550 g Pickled Gherkins, finely diced
  • 1000 g (1 pack) Frozen Garden Peas
  • 384 g Shaved NZ Champagne Ham
  • 400 g French Mayonnaise (à l’huile de tournesol)
  • 8 large Eggs
  • 2 tbsp Fresh Parsley, finely chopped
  • 140 g Spring Onion, finely chopped
  • 432 g (3 large) Carrots
  • 999 g (3 large) Kumara
  • Salt & Pepper to taste

Instructions

  1. Boil the Vegetables:

    • Boil the kumara and carrots with their skins on until cooked but not overcooked.
    • Remove from heat and let them cool completely.
  2. Boil the Eggs Separately:

    • In a separate pot, boil the eggs until fully cooked.
    • Transfer them to cold water to cool.
    • Once cooled, peel and cube the eggs.
  3. Boil the Green Peas:

    • Boil the frozen garden peas in hot water until tender.
    • Drain and set aside.
  4. Prepare the Ham:

    • Slice the ham into thin strips, then cube it into small pieces.
  5. Cube the Vegetables & Assemble:

    • Cube the kumara and carrots separately, keeping the skin on.
    • In a large bowl, layer the cubed vegetables.
    • Chop the spring onions and parsley, then add them to the bowl.
    • Add diced pickled gherkins, boiled green peas, and cubed ham.
    • Cube the boiled eggs and add them on top.
  6. Season & Mix:

    • Season with salt and pepper to taste.
    • Add the mayonnaise and gently mix everything together until well combined.
  7. Chill & Serve:

    • Enjoy immediately or let it chill in the fridge for enhanced flavor.
