Ingredients
- 550 g Pickled Gherkins, finely diced
- 1000 g (1 pack) Frozen Garden Peas
- 384 g Shaved NZ Champagne Ham
- 400 g French Mayonnaise (à l’huile de tournesol)
- 8 large Eggs
- 2 tbsp Fresh Parsley, finely chopped
- 140 g Spring Onion, finely chopped
- 432 g (3 large) Carrots
- 999 g (3 large) Kumara
- Salt & Pepper to taste
Instructions
Boil the Vegetables:
- Boil the kumara and carrots with their skins on until cooked but not overcooked.
- Remove from heat and let them cool completely.
Boil the Eggs Separately:
- In a separate pot, boil the eggs until fully cooked.
- Transfer them to cold water to cool.
- Once cooled, peel and cube the eggs.
Boil the Green Peas:
- Boil the frozen garden peas in hot water until tender.
- Drain and set aside.
Prepare the Ham:
- Slice the ham into thin strips, then cube it into small pieces.
Cube the Vegetables & Assemble:
- Cube the kumara and carrots separately, keeping the skin on.
- In a large bowl, layer the cubed vegetables.
- Chop the spring onions and parsley, then add them to the bowl.
- Add diced pickled gherkins, boiled green peas, and cubed ham.
- Cube the boiled eggs and add them on top.
Season & Mix:
- Season with salt and pepper to taste.
- Add the mayonnaise and gently mix everything together until well combined.
Chill & Serve:
- Enjoy immediately or let it chill in the fridge for enhanced flavor.
