🔸 ½ tsp baking soda
🔸 1 tsp baking powder
🍯 240g Stevia

Cream Layer:

🥚 8 egg whites (beaten stiff)
🍋 ½ lemon (juiced)
🍯 4 tbsp Natvia Stevia
🥛 500ml cream + 4 tbsp Natvia (whipped)
🧀 250g mascarpone

Cake:
🌾 150g stoneground wholemeal flour
🥚 5 large eggs
☕ 2 cups black coffee + 2 shots espresso
🍫 16 squares Guylian Belgium sugar-free dark chocolate

🥄 Instructions

1️⃣ Souvardi Biscuits:

Beat eggs + salt for 12 mins (gradually increasing speed).
Sift flour, baking soda, and baking powder. Fold gently into egg mixture.
Spoon batter onto a baking tray (4 rows of 6 biscuits).
Bake at 180°C fan bake until golden. Cool completely.
2️⃣ Cream Layer:

Beat 8 egg whites to stiff peaks.
Whip cream + Natvia until thick.
Gently fold in mascarpone + egg whites, keeping the mixture light.
3️⃣ Coffee Soak:

Brew 2 cups of black coffee + 2 espresso shots, sweetened with 8 tsp Natvia.
Dilute slightly with cold water.
4️⃣ Assembly:

Line a springform cake tin with foil.
Layer biscuits, coffee soak, cream mixture, and repeat.
Finish with a final cream layer + grated dark chocolate.
Refrigerate for 12 hours to let the flavors develop.
