🌿 Ingredients

Dough ✅ 4 tbsp Extra Virgin Olive Oil
✅ 2 tbsp Sourdough Starter (or Greek Yogurt)
✅ 550 ml Warm Water
✅ 40 g Natural Sweetener
✅ 4 tsp Himalayan Salt
✅ 8 Jalapeño-Stuffed Olives (or preferred olives)
✅ 13 g (1.5 sachets) Instant Dry Yeast
✅ 350 g Standard Flour
✅ 350 g Wholemeal Flour
✅ 600 g Grated Mozzarella
✅ 700 g Chicken Thighs (6 normal-sized or 8 small)
✅ 12 Cherry Tomatoes
✅ 1 Medium Red Onion, Sliced
✅ 200 g Mushrooms (Optional)

✔️ Bread Maker (for kneading & first proofing)
✔️ Large Mixing Bowl
✔️ Baking Tray & Parchment Paper
✔️ Pastry Brush
✔️ Rolling Pin
✔️ Sharp Knife
✔️ Tea Towel

👩‍🍳 Instructions

1️⃣ Preparing the Dough

🔸 Pour warm water into a large bowl and add yeast. Whisk vigorously until combined.
🔸 Add sourdough starter (or yogurt), Himalayan salt, natural sweetener, olive oil, and both flours. Mix with hands until well combined.
🔸 Lightly flour a work surface and knead the dough until a smooth ball forms. If sticky, add more flour.
🔸 Place dough in a bread maker and select the ‘Pizza Dough’ setting (~45-50 minutes).
🔸 If no bread maker, place dough in a heat-resistant bowl, cover tightly with foil, and proof in the oven at 50°C for 20 minutes. Then, remove and let rise on the counter for 40-50 minutes.

2️⃣ Dough Check & Proofing

🔹 After rising, flour the work surface and knead the dough gently 4-5 times.
🔹 Form a ball and cut it into 4 equal parts. Cover with a tea towel.

3️⃣ Preparing the Filling

🔺 Season chicken thighs with Himalayan salt and pepper, then grill in the oven for 7 minutes per side or until golden.
🔺 Chop the olives, tomatoes, and basil. Slice the onion and set aside.
🔺 Chop mushrooms, drizzle with olive oil, and grill until slightly dehydrated.
🔺 Divide grated mozzarella into four equal portions.

4️⃣ Assembling the Calzone

🔸 Roll one dough portion into a 3-5 mm thick circle. Transfer it onto baking paper, leaving half on the paper and half on the floured surface.
🔸 Spread pizza sauce on the dough and sprinkle mozzarella.
🔸 Add sliced chicken, another layer of mozzarella, and distribute tomatoes, onions, olives, and basil evenly over one-half of the dough.
🔸 Fold the empty half over the filled half and pinch edges together.
🔸 Transfer calzone onto a baking tray and let rest for 15 minutes.
🔸 Repeat with remaining dough portions to make four calzones.

5️⃣ Baking the Calzone

🔥 Preheat oven to 240°C (fan bake).
⏳ Bake for 15 minutes or until golden brown.
🍕 Let cool slightly before serving.

As someone with Ukrainian roots, baking holds a special place in my heart. I love crafting different recipes, and this calzone is one of my favorites.

💡 Tip: Once your calzone is baked, you can either leave it as is or brush it with butter for extra flavor. If you want a crispier finish, pop it back in the oven for another 5 minutes just before serving.

Pair it with a side salad or enjoy it on its own—the decision is yours! Personally, I love serving it with a fresh arugula salad topped with sliced pear, toasted walnuts, and a drizzle of olive oil and balsamic vinegar. It always takes me back to the Italian coast! 🇮🇹🥰
