Oatmeal Shortbread Cookies

Wholesome, protein-rich cookies with a soft shortbread bite and lovely oat texture.

Ingredients:

  • 2 ½ cups Oats
  • 40 g Oat Bran
  • 25 g Vanilla Pea Protein Powder
  • 120 g Unsalted Butter, softened
  • 150 g Baker’s Secret Sugar Replacement (or other stevia/erythritol blend)
  • 100 ml Egg Whites
  • 1 Whole Egg
  • ½ tsp Baking Powder
  • Pinch of Himalayan Salt

Instructions:

    1. Whisk Wet Ingredients:
      In a large bowl, whisk together the softened butter, whole egg, and egg whites with the sugar replacement until creamy. Add a pinch of Himalayan salt.

    2. Combine Dry Ingredients:
      Stir in the oats, oat bran, vanilla pea protein, and baking powder. Mix until a dough forms.

    3. Shape the Dough:
      Roll the dough into a log or “sausage” shape. Use a sharp knife to slice into even-sized circles.

    4. Prep for Baking:
      Place the circles on a baking tray lined with parchment paper. Gently flatten each one with your fingers or the back of a spoon.

    5. Bake:
      Bake at 170°C (338°F) until golden, about 15–18 minutes, depending on your oven.

    6. Cool & Enjoy:
      Let cool slightly on the tray before transferring to a wire rack. They will firm up as they cool.
